Engrain, or Triticum monococcum, is the first cereal domesticated by humans.
It is a hulled cereal, which is de-husked at the farm before being ground into flour.
Engrain has a low gluten content (around 7%) and is rich in essential amino acids. It is suitable for baking and develops a rich flavor.
Manufacturing Process
The cereals are grown on the farm in organic agriculture in Eincheville and milled using an Astrié stone mill. This traditional flour extraction method unfolds the grain rather than crushing it, giving the flour unmatched properties. The germ of the cereal is preserved, keeping its nutrients, vitamins, and minerals intact in the flour.
