Ingredients: Durum wheat semolina*, ancient Poulard wheat*, water.

Cooking instructions: Cook for 8 to 10 minutes, depending on the desired texture.
Our cereals, both ancient and modern, are grown in our fields with methods that protect biodiversity, water, and soil. For pasta production, we use durum wheat, ancient Poulard wheat (a semolina wheat), and soft wheat. The resulting flours and semolinas are stone-milled, preserving the maximum amount of essential minerals.
Our pasta is bronze-drawn, which gives it the rough texture necessary to hold the sauce. It undergoes slow drying at low temperatures to preserve its flavorful qualities.
