This blend of different wheat varieties has been multiplied on the farm and naturally adapted to our terroir.

The cereals are grown on the farm using organic farming methods in Eincheville and ground using an Astrié stone mill. This traditional milling process rolls the grain rather than crushing it, which gives the flour unparalleled properties. The germ of the grain is preserved, keeping the nutrients, vitamins, and minerals intact in the stone-ground flour.
