This cheese is made from approximately 2 kg of pressed, uncooked cheese paste. It can be enjoyed either raw or cooked.
It is produced from hay milk (STG) collected from the Romé farm in Royaumeix, where cows are traditionally fed grass and hay, respecting the seasonal rhythm, without fermented feeds or GMOs.
The milk is then processed by the Fromagerie du Lac located in Fenneviller.
