Cooking time: Approximately 4 to 6 minutes, depending on desired al dente or tender texture.
Our cereals, both ancient and modern, are cultivated on our fields with practices that preserve biodiversity, water, and soil quality. For the production of pasta and ravioli, we sow durum wheat, Poulard wheat (an ancient semolina wheat), and soft wheat. The resulting flours and semolinas are stone-milled, retaining maximum nutritional mineral elements.
Our pasta is bronze-die extruded, giving it the rough texture necessary to hold sauces. It undergoes slow drying at low temperatures to preserve its taste qualities.
